Start with a smoked chicken for the best depth of flavor — season it with Meat Church The Gospel, smoke it, then pull and chop the meat. Store-bought rotisserie chicken works in a pinch.
Combine all chili ingredients in a Dutch oven or slow cooker.
To smoke: Prepare your smoker at 225°F using hickory or pecan wood. Place the Dutch oven in the smoker and cook uncovered for 3–4 hours, stirring at least every hour. Cover and simmer until serving time.
To use a slow cooker: Cook on medium for 3–4 hours to let the flavors blend.
Top each serving with shredded cheese, cracked black pepper, cilantro, and sour cream. Serve with corn bread or toasted baguettes.
